This recipe yields 12 servings
Ingredients
20 g White truffle oil
20 g Olive oil
30 g Shallots, minced
60 g Scallions, thinly sliced
280 g Sauteed shiitake mushrooms, ground
8 ea Eggs, whole
500 g Cream 35%
Sea Salt and white Pepper to taste
Method
- Lightly sauté together the shallots, scallions, and ground mushrooms in the olive oil. Season with salt and pepper. Transfer to a bowl when soft and cooked through. Cool to room temperature.
- Add and mix together all remaining ingredients. Season with salt and pepper.
- Butter 12 ramekins and fill to 4/5ths full.
- Place in hot bain-marie (water up half way) and bake in oven at 150 °C (300 °F) for 25 minutes or until flans are set.
